The Shotoh/ Paring Knife
Handmade 3.5"/90mm Shotoh/ Paring Knife made of stainless damascus folded by Damasteel of Sweden in Sparse Twist pattern. The tapered octagonal handle is made of locally sourced figured Walnut from Zack's historic farm in Charlottesville and includes brass bolsters and hardware.

The "Fusion Design Series" will concentrate on blending the best of Western and Asian knives. The series will eventually include three main profiles: The Gyuto (chef knife), the Honesuki (petty knife), and the Shotoh (paring knife). We believe these are the most important three knives any chef or home cook needs to start the foundation of a knife collection.

About the Fusion Design
This knife profile was developed by Monolith in 2020 and first featured at the Damasteel Chef Invitational Fall 2021 show! The term "Fusion Design" refers to the blending of East and West. Many chefs love the quality of Japanese knives. Many have become accustomed to the octagonal handle design and the unique blade profiles with a longer flatter edge, thinner blade and lower tip. Additionally, many cooks and chefs have enjoyed the introduction of Damascus and San Mai as options for their blade steel.
Japanese knives are known for their legendary performance, while their Western counterparts are more well known for comfort and durability. The French Sabatier has its own deep rooted following throughout the culinary world elite. Typically drop forged and made to stand the test of time, the Western knife profiles of Europe which we still use today have been in use for centuries. We chose to take the best of these two philosophies and blend them into a single design. We think our "Fusion Design" blades are a perfect balance of these two camps.

Like all Monolith Knives, these blades are warrantied for life. Any repairs for damages will be reviewed on an individual basis. Anything we did wrong will be fixed no matter what, free of charge with return shipping.

    This is the flagship of our first "line" knives. The "Fusion Design Series" will concentrate on blending the best of Western and Asian knives. The series will eventually include three main profiles: The Gyuto (chef knife), the Honesuki (petty knife), and the Shotoh (paring knife). We believe these are the most important three knives any chef or home cook needs to start the foundation of a knife collection.

    The Gyuto/Chef
    Handmade 8.75"/220mm gyuto made of stainless damascus folded by Damasteel of Sweden in Sparse Twist pattern. The tapered octagonal handle is made of locally sourced figured Walnut from Zack's historic farm in Charlottesville and includes brass bolsters and hardware.

    The sheath is made of saddle leather and should be used for travel only.

      These custom box sets contain eight of our handmade 5" Damasteel steak knives. Each box comes complete with two cradles which each hold four knives, for a complete set of eight.

      These steak knives are offered in twist pattern Damasteel crafted in Sweden and handles featuring African Wenge hardwood and nickel silver pins. They are absolutely stunning!

      The African Wenge is sourced using FSC graded wood to insure it was harvested according to international import laws. This wood is a common species used in knife handles and musical instruments. It is very durable and quite beautiful.

      These knife sets are of the most exceptional quality. There is nothing else like these available on the market of this caliber. These sets are covered by our lifetime warranty and free sharpening service. If properly cared for they will last generations.

      Born from roots and tradition of Oyster farming and shucking on the Chesapeake Bay, dating back to the early 1800's. Our Chesapeake Shucker follows a design and shucking style that is generations old called bill shucking. This style hearkens back to knives historically used in oyster shucking houses, restaurants, and homes throughout the Chesapeake Bay region. 

      Monolith's Chesapeake Shucker is made for bill shucking from the front, not for attacking and prying the hinge like a mini crowbar. With a thin blade, this knife provides quick and clean access to severing the oyster from its shell. The shape of our blade has been narrowed for efficient access to the oyster shell and then has been given a slight edge for cutting the muscle. Our handle is designed to fit in your hand comfortably through many, many oysters.

      Our shucker blade is of Damasteel, a high-grade stainless Damascus that is both durable and beautiful. The blade, measuring 2.5" is securely fit into a turned handle made of stabilized wood. The wood handles are mostly domestic species like Walnut and Cherry, sourced directly from Zack's farm, but we do limited runs of other interesting species and/or burls when we get them. The ferrule functions to give a secure hold on the blade under shucking pressure for added durability.

      And just like any Monolith knife...performance and beauty go hand in hand.
